well, it has been long taught in my family to put a lid on the pot so you dont have to flip them. flipping the eggs is the devil's due.

In the UK a fried egg is exactly that – fried. You use more oil than shown and a spoon to ladle the excess hot oil over the egg yolks to make sure they are cooked properly. In the UK I've never known anyone to have over easy eggs, not even when I worked in many hotels – it's an American thing.

To get a fired egg correct you need fresh eggs of course, always a good idea!

Many (and maybe even most) professional chefs do not use non-stick pans. Maybe they know something we don't. So why are us home cooks always being told to use non-stick pans?

"maintain the pristine white if the eggs"
Sorry but no. A good fried egg has a runny yolk and whites that are slightly browned and crispy.

There is only one perfect way to fry an egg and that is to use a generous amount of oil and tilt the hot pan towards the area you drop the egg into. That way, it makes no difference if the egg is fresh or not – you still get a good full-bodied fried egg.

Why is something so simple presented as something so difficult?

  37. RottingintheMidwest

    November 5, 2017 at 7:04 am

instead of flipping the over-easy eggs a second time in the pan, wouldn't it make more sense to just flip them onto a plate?
