    I just tried making this and there's no where near enough water in this recipe. It came out like string cheese, nothing at all like anything you'd consider to be a "dough."

    What kind of cheese is used? I tried BelGioioso Fresh Mozzarella cooked it on a thin crust in 500 degrees for about 10 minutes and the cheese was extremely watery, almost a pool. My sauce was pretty thick so it must have been the cheese. I tried packaged shaved mozzarella and it was not watery, but I would prefer to use the fresh kind that i see so many professionals use.

    Is it that hard to tell us exact measurements and actually explain things?? So many of these videos don't explain crap!!

    The comments remind me of the old adage of, "There's a million ways to skin a cat, but the cat ain't gonna' like any of them." Saying something in like a Neapolitan pizza is just crazy is you have never lived in Naples to begin with. Me, I lived in Pianura and found cooking one can take over a day when you consider how much time is spent in stoking the brick oven and preparing all the dough and toppings. Cooking is a dedicated art form there and not at all like going to any fast food pizza place in America. It is a life experience you won't get at any NY pizza joint.

    the dough will not maintain its shape ,it keeps drawing back to the center . What am I doing wrong ? its very elastic .

    I used to happen to see those really interesting NYT short doc videos on JetBlue PlusTV every time I'm on a flight to Florida (didn't see this one on a flight but sure looks tasty). Now they're replaced by short docs from The Wall Street Journal, in which the move is probably isn't as good as NYT, but still ok.
